Matcha is a kind of tea powder, but it is different from ordinary tea powder. This tea powder has unique flavor and health care function and can be used as additives in food.

Matcha originated in China and prevailed in Tang and Song dynasties. Difference between Matcha and green tea
The raw material of Matcha is "milled tea ", that is, one month before the tea is harvested, the tea garden is covered with shed, about 20 days after, tea buds is picked, after distillation to remove the surface moisture of tea,then, dry milled tea, and then ground into very delicate powder. The finished emerald powder is matcha.The biggest difference between matcha and other green teas is that:In addition to distillation, the manufacturing process for ordienry fried tea or jade dew tea also including different degrees of rolling and drying procedures. As Matcha is very fine powder particles, so it can be suspended in the water, but must be stirred with a tea brush till foaming when drinking,and there is no Precipitation phenomenon even if puting for a long time.
The currently prevailing green tea powder (pink tea) is only to grind green tea into "pink tea ", which is different from the traditional Japanese matcha making method, and its processing raw materials are also different. The color of green tea powder is green brown, and the color will be dark green brown once it is flushed with water . As the green tea powder particle size is thicker, there will be rapid precipitation after brewing. Green tea powder is usually used in the manufacture of biscuits, cakes, ice cream and other snacks in Japan, so to taste the authentic Matcha, you should pay more attention when selecting.
